The Soil
The olive grove sits on a 3-million-year-old volcanic lava flow in Bullengarook — a rare geological formation known as an inverse ravine, where ancient basalt filled a valley and the surrounding softer rock eroded away over millennia. The result is deep, mineral-rich volcanic soil that produces oil with real concentration and character.
The Trees
Three heritage Mediterranean varieties — Picual, Koroneiki, and Arbequina — planted 17–18 years ago in equal proportions. Dry-grown, no irrigation, no sprays, no fertiliser. Water stress concentrates flavour and increases polyphenol content naturally.
The Process
2026 is our inaugural harvest. Each variety will be picked early — at the green-to-veraison stage — and cold-pressed the same day at Apulia Grove in the Macedon Ranges. Single-varietal bottling, full traceability from tree to table.
