Bright ruby. Pepper and plum. Earth. Forest. Complex Victorian Shiraz of great style. Ripe black cherries and black currants with a lifted floral perfume, curing spices, cloves and nutmeg. Still young — will age another five years. Serve at 15°C to maximise the fruit aromas.

Aromatic and medium-bodied. Dark fruits — blackberry, plum — with pepper, stony spice, and a savoury, earthy undertone. Fine-grained tannins. Made in a restrained, cool-climate style that favours elegance over power. From a strong 2021 vintage on the Mount Camel Range.

Dark red-purple. Violets, plum, aniseed, and spice on the nose. The palate has blackberry and cassis with cedar and fine, polished tannins. ~20% whole bunch. Two years in French oak has added depth without losing the perfume and freshness. 715 bottles made.

~150 trees planted in 2008 on a 3-million-year-old volcanic lava flow. Three Mediterranean varieties — Picual, Koroneiki, and Arbequina — dry-grown, no irrigation, no sprays. Early harvest, cold-pressed same day. We're optimising for phenolic extraction: picking early, pressing quickly, keeping temperatures low.
Origin: Spain
The most robust of the three. Naturally high in polyphenols and oleic acid, with a peppery finish and green herbaceous notes — tomato leaf, fresh-cut grass, bitter almond. Handles early harvest well and produces oil with real structure and longevity.

Small fruit, high oil content. Produces a complex, aromatic oil — green apple, artichoke, a clean peppery kick. High in antioxidants. The variety behind most premium Greek oils. Thrives in the dry, mineral-rich volcanic soil here.

The most approachable of the three. Mild, buttery, and slightly sweet, with ripe stone fruit and a soft finish. Lower bitterness than Picual or Koroneiki but still benefits from early harvest — we're picking green to keep the phenolic content up.
