The Wine

How We Make It

Hand-harvested, wild yeast, basket pressed, gravity-filled. Micro-batches from Heathcote and the Macedon Ranges.

Vineyards

Heathcote · Mount Camel Range

Colbinabbin

Shiraz · Grenache

Block PT23, Colbinabbin Estate. Single block, all vintages. Mount Camel Range — ancient Cambrian rock, shallow rocky soils. The kind of ground that keeps vigour low and concentrates fruit.

Michael Dhillon at Bindi processes our grapes. Same block and batch as Bindi's Pyrette Shiraz.

Wines: Heathcote Shiraz (2020–2025) · Heathcote Grenache 2025

Macedon Ranges

Glenhope

Merlot · Malbec · Cabernet Sauvignon · Cabernet Franc

Cooler and higher than Colbinabbin. Bordeaux varieties from a site that suits them — longer hang time, slower ripening, good acid retention.

Wines: Glenhope Red Blend 2024

Heathcote

Col Mountain

Grenache (Rosé)

Grenache for rosé. First vintage 2026, currently in ferment.

Wines: Grenache Rosé 2026

Bullengarook · Macedon Ranges

Tilly's

Pinot Noir · Chardonnay

Our place. Planted from spring 2024 — own roots, local cuttings. Three-million-year-old volcanic lava flow. There were vines here in 1868. Years from producing, but we're not in a rush.

The Winemaking

Hand-harvested. Wild yeast — no commercial cultures, no additions apart from minimal sulphur at bottling. Hand pressed in a basket press. French oak. Gravity-filled bottles. Unfined, unfiltered.

300–700 bottles of each wine. No recipe. Each vintage is the season, the fruit, and whatever the wild yeast decides to do.
